Asian Lettuce Wraps
I thought I posted this recipe awhile back but apparently I didn't. So I am rectifying it NOW. This recipe is so easy and so delicious and so low-fat. I sometimes make it and keep it in my fridge (and don't tell anyone) so I have better-than-takeout-lunch for a week.
Asian Lettuce Wraps
1 Tbs peanut oil
1 lb. ground turkey
1/2 c Asian peanut sauce
1 Tbs soy sauce
1/3 c chopped green onions
1/2 c shredded carrots
1/4 c chopped water chestnuts
1 head iceberg lettuce (I use romaine)
Heat oil and saute turkey until cooked through. Add carrots and water chestnuts. Add peanut sauce, soy sauce and green onions. Spoon into lettuce leaves. Top with dipping sauce.
Dipping Sauce:
1 c apricots preserves
1/4 c chili garlic paste or Thai Sweet Chili sauce
Serve with rice, endamame and egg drop soup.

Frank's Letter May 6, 2009
I can't wait for Sunday!
Dear Mom,
This week has been a great one. Things are really starting to turn around here. We've been finding some legitimate new investigators finally! We had absolutely nothing to report in our numbers (lessons taught, new investigators, anything like that) for the week before Sunday, but after church we got a call from the senior couple up in Romney WV and said they'd had a hispanic man coming to church for the past 2 weeks who lived with a recent convert of ours and who was married to white woman they were teaching. They had an appointment with them later and asked if we could come teach him. Could we??? We went up (it's over an hour to Romney from Winchester, which is not even close to the farthest away place in our area) and they fed us some pork tacos that were half cartilage. Yum. Most of the food has been really good though. He is awesome though, Rueben is his name. We are going to teach him the 2nd lesson this Sunday and challenge him to baptism for 2 weeks from then. I think he could really do it, and he lives/works/spends ALL his time with this solid recent convert up there named Jorge.
We've got a few other people now that we've been finding by a lot of various means, but I'm very relieved with the outpouring of success we finally have seen after that fast. It's not the first time that a fast sunday has been a turning point in the work.
The Swine Flu (Gripe de Puerca, I finally figured out what they were talking about a few days into it) has not been a problem here. Don't worry about it at all.
We do our emailing here at the city library, which I'll be sending a picture of me standing in front of. It's this crazy pillared thing that looks like some old palace. The pictures attached to this one is Elder Barnes and I with some investigators (Mark and Beverly) and a Stake Missionary named Steve Vongchang (Coolest guy ever!) And then one of downtown Winchester. I'll send some more pictures today if I have time.
This week was the Apple Blossom festival here. Biggest thing to happen to Winchester in the whole year. We went on Splits with the English Elders and went and talked to the people in the streets, giving out a lot of cards and even finding us some new potential investigators that I spoke to in spanish. It's really starting to come along.
I won't write too much this week though, because I get to talk to you on Sunday. Call at 5:00 your time (7:00 here)... This is President De La Cana's (Canya, I don't know how to write the crazy n) phone number and they said they would feed us and let us make our calls there.
The name tag was supposed to be a birthday present, I just couldn't wrap either of them. I anticipate being Spanish for the rest of my mission unless I get switched for some sort of leadership spot, but who knows. I'll be wherever I'm needed. I kept two of my english ones just in case; one of the spanish needs to go english next transfer. I don't think it will be me however, as I have to learn to speak it and just got here.
I heard I have a letter from Matt Peterson and from Nick, FINALLY, at the Hagerstown apt. I actually wrote Brady earlier today, I hope he's doing well. I've been really slacking off on my letter writing. I have a massive stack to reply to.
I just love Baptisms. They're the greatest spiritual experiences. It's always so strong. it sounds like you had an excellent time at Gracia's. We had our zone conference yesterday, 2nd to last with the president. It was absolutely incredible. I didn't even want to take p-day this week, just go out and do more. Ah well, it's stuff that had to be done.

UMAF Conference

saginaw_annie is in Provo today at the UMAF Conference (Utah Multimedia Art Festival). She's so excited because she TOOK 1ST PLACE! As a first year photo student, she's doing really well. Who'd have knows she'd be so talented. Okay, I'm not that surprised. She's a very talented young lady in many areas.
